Why are some people so allergic to clams? Allergies to most shellfish relate to proteins called tropomyosins, which are used to signal muscles to contract. They are quite heat-stable which is why cooking doesn't make a difference to those with shellfish allergy. Tropomyosins are strongly conserved across invertebrates, which is why people who are allergic to mollusks are often also allergic to crustaceans. As to why invertebrate tropomyosins are so allergenic while ones in us and other vertebrates are not nearly as commonly allergenic, scientists don't really know why yet! #clamFacts
