Why are some people so allergic to clams? Allergies to most shellfish relate to proteins called tropomyosins, which are used to signal muscles to contract. They are quite heat-stable which is why cooking doesn't make a difference to those with shellfish allergy. Tropomyosins are strongly conserved across invertebrates, which is why people who are allergic to mollusks are often also allergic to crustaceans.
