The problem with watercolours, even opaque watercolours, is that if you try to add a layer on top of one that's already on the paper, it dissolves the paint on the paper again.
The problem with acrylics is that once they dry, you can't really dissolve them again, which is particularly vexing when it happens on the palette, or, worse, in the jar/tube.

@Anke It's really interesting, yeah! Seems there's plenty of additives to help thin acrylics, make them take longer to dry, or even make them re-wettable for a time, but that doesn't do much to help after the fact.
Something I should definitely be careful about while painting minis!
@elfi I bought thingies with lids that were supposed to keep the paint fresh. They did not work and were impossible to clean...
@Anke Oof, yeah... I'm probably going to go with tubes of paint or something to keep them sealed enough
