The problem with watercolours, even opaque watercolours, is that if you try to add a layer on top of one that's already on the paper, it dissolves the paint on the paper again.
The problem with acrylics is that once they dry, you can't really dissolve them again, which is particularly vexing when it happens on the palette, or, worse, in the jar/tube.

@Anke Oof, yeah... I'm probably going to go with tubes of paint or something to keep them sealed enough
@elfi yeah, I was mostly thinking of colours I mixed myself.
@Anke oh heck! That is a big problem, yeah--I'll have to watch out for that myself too and look up ways to avoid that for storage
@elfi I bought thingies with lids that were supposed to keep the paint fresh. They did not work and were impossible to clean...
