Wow. Neither Gnumeric nor Calligra Sheets pass my 10-minute test with a dark system theme. In Gnumeric, the cursor is black (on a black background). In Calligra Sheets, the default text is black (on a black background) once out of editing mode.
I have to wonder if anyone ever tested any of this at all

Err, correction, in Gnumeric, the cursor is white on a white background.
Neither seems to have *any* interface settings at all..
