How about zuurkoolstamppot? eg. ohmydish.com/recipe/zuurkoolst (err on the side of too much pepper rather than too little!)

Not 100% sure whether milk/butter substitutes have the same effect as regular milk/butter, but worst case you can just leave them out (it'll just be drier). Personally I prefer to undercook the sauerkraut a bit, for a more sour-ish taste. If you leave out the bacon (and/or substitutes), definitely add *something* else oily to it, or it'll become super dry!
