@Ember @stellarskylark I'm reminded of when a Dutch consumer affairs TV programme went to visit Aviko, the largest frozen fries manufacturer in the Netherlands, to ask them what the difference was between their normal fries and their more expensive "airfryer/oven" variant.

Aviko was all "no, we cannot show you this, that's a proprietary trade secret, you cannot come into our factory". Being extremely cagey and unpleasant.

Then they showed up to the factory of a competitor, Lamb Weston, and the guy there went "oh yeah it's really simple, you just leech the starch out of the potato and then apply it as a concentrated coating at the end of the production process again, that makes them crispier in the airfryer, this is what Aviko is also doing. Come in and I'll show you the process".
