The best tip I've learned this year is microwaving mushrooms. Even if you're still going to fry or bake them later. It's just so much faster and easier.
@f0x@nota that's how I do the potato for curry. keeps a lot of the starch that would be lost if you boil them instead, and that helps thicken the sauce.
